Sweet Potato Wrap and Crunchy Apples

For some low calorie foods I always think of apples and sweet potatoes!

You can make a special lunch with these two simple foods that are so very nutritious.

First steam a sweet potato, slightly on the firm side. Allow to cool and remove the peel.

Next mash with a potato masher and add: 1/2 cup whole wheat bread crumbs, 1/3 cup of slivered almonds, 1/3 cup of sunflower seeds ( unsalted) and mix together. Keep adding more bread crumbs to the mixture if it is too moist.

Roll into a ball and then flatten; placing into a frying pan with 1 teaspoon of olive oil or olive oil spray. Allow to cook for about 5 minutes on medium heat to get a nice brown coating and then flip.

Next, I used a low carb wrap and placed the burger into the wrap and toasted until crunchy. I used a Panini Maker to toast mine.

For dessert

With some leftover oats from the refrigerator I added some sliced apples,  a teaspoon of cinnamon  and few raisins. I sprayed a pan with canola oil spray placed the apples and oats in the pan. I cooked on medium for about 3 minutes, flipping to get a crunch.

I believe that leftover oats work best because most of the moisture is gone and they get crunchy.

Therefore, if you want to start from scratch. Cook some oats as per directions and then leave them in the refrigerator to lose their moisture.
