I have been trying relentlessly to make the perfect burger without meat for many years. In the summer I focus on this quest because I love to cook outdoors.
What I have found is the potato is the best veggie to use in a homemade veggy burger recipe because it holds together quite effectively.
Here is a good recipe for 2 burgers.
1/2 cup whole wheat breadcrumbs
1 teaspoon cumin
1 teaspoon turmeric
1 medium size potato steamed- cooked well
1 small white onion
2 teaspoons sunflower seeds (save a sprinkle for topping)
1 medium apple, cubed
1/2 cup cooked cauliflower- chopped small
1/4 cup fresh chopped basil
Mash the potato with skin on, add the spices, including fresh basil and then add cauliflower, sunflower seeds,chopped onion and the apple. At the end add the breadcrumbs and mix well, but try to keep the integrity of the cubed and chopped ingredients.
Roll into 2 balls and then flatten, topping with some sunflower seeds.
place in a pan coated with olive oil and cook on the grill for about 10 minutes, flipping once.
