In the spring and summertime there are lots of fresh veggies out there for some great meals.
I go to the Farmer’s Market every Saturday morning to pick up the freshest veggies. Did you know that your locals have the best vegetables? Local farmers use less pesticides/ and some farmers at the local markets grow only organics.
Here is a quick recipe with the fresh spinach that I bought Saturday.
Using a teaspoon of extra virgin olive oil in a frying pan simmer a clove of chopped garlic, adding the veggies of your choice. I started with an orange pepper that I chopped, added 1/2 cup red onion chopped, then added 1/4 cup of canned kidney beans that I drained and rinsed.( the kidney beans are full of protein and fiber for your health and wellness)
I added the fresh spinach last and steamed with a lid on for about 5 minutes. I like my veggies crunchy, therefore take a peak and decide how you like yours!
After the veggies were ready I topped with 1/2 cup of fresh pineapple ( you can add it sooner if you like, I like mine cool).
