Lima Bean Potato Soup

I made an easy recipe today with uncooked lima beans and potato.
First rinse well 1 cup raw, large lima beans, add 3 -4 cups of water and bring to a boil and then simmer with the lid slightly open for 1 hour. ( package says 2 hours) Put to the side.

You want to cook only half way so they can cook with the other veggies later.

Do not rinse at this point, you want the broth from the beans for your soup.

Next steam 3-4 medium  white or sweet potatoes with the skins on; partly cooking also ( about 8 minutes). While steaming potatoes I added a clove cubed garlic and cube of ginger. This helps the water steaming the potatoes to become garlic and ginger like.  You can also steam a small white onion for added zest.( don’t forget to add this steaming water to your soup.)
In a very large pot place the beans, potatoes and any other veggies you want. I used 1 cup frozen spinach along with 1 cup veggie mix of carrots, beans, and corn. While cooking add your special spices; I added cumin and turmeric, my favorites.

Cook for another 1/2 hour or until the veggies are the consistency you like. And then allow to sit with the top on for another 15 minutes, and then serve.

If you like your soup spicy, add 1 cup prepared salsa at the end for some added zest! ( or make your own salsa: 1 large tomato, 1 cup chopped green pepper, 1 cup chopped white onion;  1 clove chopped garlic, 1 teaspoon oregano,1 teaspoon, cumin, 1 teaspoon turmeric,  and some fresh  chopped cilantro and allow to sit in the refrigerator overnight.)
