Today for a quick lunch I ate rice and veggies along with a salad with dark, green lettuce, radicchio ( a red lettuce), sliced strawberries, raisins and a sliced apple on top.
Ingredients for Baby Brussels Recipe:
Start with a cube of fresh chopped ginger and a 1 clove of chopped garlic ( a good combination for a healthy start)
Simmer in a tablespoon of olive oil for about 2 minutes
Add 1 cup of brown rice ( I have some already cooked in my refrigerator for my meals)
Then add the rest of your veggies. I added some white corn, apples and topped it off with some pineapple. I added the pineapple and apples last so they stay fresh.
You then simmer for about 5 more minutes depending on whether you used fresh or frozen, and on your individual taste.
The dressing for my salad was a simple olive oil and vinegar with crushed garlic.
