There are so very many reason to eat your veggies, and cauliflower is from the cruciferous ( cabbage family) having a protective effect against cancer. There is something great about vegetables because they are also very low in calories, fat and sodium, along with being a fine source of potassium and fiber. I make side dish with cauliflower for those who are not convinced that it is a great tasting veggie just steamed.
Breaded Cauliflower
This recipe may add a few calories to this 30 calorie per cup veggie!
Cut up cauliflower into bite size pieces. Mix together 1 cup whole wheat bread crumbs, 1 teaspoon cumin, 1 teaspoon turmeric, 1 teaspoon oregano.
Dip each piece in coconut or almond milk and then roll into the wheat crumbs.
Place on a canola sprayed cookie sheet and bake for 30 minute, flipping a few times to get a nice brown and crispy texture.
And when you are at the market, look for one that is firm, heavy, has nice green leaves around it and also has no brown spots on top.
