On the first winter day, I love to make some soup
You can make a great soup that is easy to make on those cold winter days.
I start with a small can of V-8 juice ( 4 0z) and add 2 cups of water to the juice. I use the low sodium kind. If you like thicker soup, you can teaspoon of flour which you have blended first with 1/2 cup of water.
Next I add the ingredients that I enjoy. First 1/2 cup of lentils, 2 cups of chopped carrots, 1 clove garlic chopped, 4 small potatoes cubed, 2 sweet potatoes cubed.
Cook at a simmer for about 1 /2 hour or more depending on how you like your veggies.
You can also add other vegetables such as celery, spinach etc…
