Split Pea Soup

In the winter time, soup is a good choice to warm you up. We are having some record cold weather here in New York, and today I will give you a recipe on Split pea soup.

I am making the vegetarian split pea, and you are welcome to add the ham bone if you like~

Ingredients

2 cups of dried split peas

1 Bay leaf

1/2 cup chopped onion

Salt and pepper to taste

1 cup chopped celery

2 quarts water

1/4 teas. thyme

1/2 cup carrots

Rinse  and drain split peas. Put in a large kettle with 1 quart water and bring to a boil. Reduce heat to a simmer and add the onion, carrots and celery.

If you would like to use the split peas as a veggie or main dish, cook only 30-40 minutes.

If you would like split pea soup or puree, cook 45-60 minutes

Nutritional Facts: Each 1/4 cup of soup has 90 calories, o fat, o cholesterol, 5 mg sodium, 21 g carbohydrates, 3 grams sugar and 9 grams dietary fiber.
