This is an easy recipe for the beginner vegetarian, or anyone who is looking for a tasty vegetable meal, packed with protein, because tofu has about 9 grams of protein per serving.
Start out with a splash of olive oil and chop a clove of garlic and a slice of ginger. Add a sprinkle of curry powder.
Simmer for about 3 minutes. After, add crumbled or cubed tofu ( about 4 ounces) and cook for about 5 minutes so that the garlic and ginger seep into the tofu. Tofu takes on the flavor of whatever you cook it with.
Next add a cubed sweet potato ( already cooked, I used a left over sweet potato and some carrots ), last but not least, I added some frozen spinach. You can also use fresh spinach, about 1 cup. Steam for a few about 5 more minutes to allow the spinach to cook and then serve topped with a sliced apple and sprinkle on some cinnamon.
A great lunch that is low in calories and practically no fat at all!
