Veggy Soup for the Cold Days Coming!

I love soup, and I am glad it is the time of year to make some. It warms you up after being out in the rain or snow. There is also a belief that people who eat soup are thinner than people who don’t, so get on the bandwagon, and make yourself some soup.

Here is a simple recipe for veggy soup:

I start with a clove a garlic and some olive oil, I also add some crystallized ginger ( or fresh) to the skillet and simmer until golden. I next add a can of V-8 juice, 4 ounce can- low sodium , and fill the can with water. So you have about 8 ounces of liquid. I next add my veggies. I love spinach and cabbage.

Today I used fresh cabbage chopped coarsely, 1 cup of broccoli  and about 4 oz of frozen spinach. I let it simmer for about 5 minutes and then added 4 ounces of almond milk to make the soup a little creamier.

After about 10 minutes simmering, I added a can of chili beans that came with some spices already in the can. ( you could just add a regular can of any kind of beans, depending on what you like, and your own spices such as cumin and sage)

I then let it all simmer for about ten minutes. You can also add other veggies such as corn, or more colorful beans.
