I love autumn and its crisp smells. For an autumn side dish, I love quinoa. It is a grain powered by high protein! 9 grams per 1/4 cup serving.
Here is a simple recipe for Autumn Quinoa.
Follow the directions on the package for quinoa and cook. It usually calls for 1-1/2 cup of water to 1 cup grain. It cooks in about 12 minutes. Just like rice, bring to a boil and then simmer.
While quinoa is cooking, chop 1 large apple and sprinkle with some lime juice.
When quinoa is done, allow to cool for a few minutes and then add the apples.
Sprinkle in about a teaspoon of cinnamon and stir. Top with more cinnamon and add some mandarin orange slices.
