I spent the morning preparing some meals in advance. It is always a good idea. I made veggie chili and ginger and garlic tofu. The tofu recipe I will share today. If look in the archives of my category, healthy recipes, you should find the chili recipe.
1/2 package extra firm tofu -cubed
1 cup cabbage chopped finely
1 cup red pepper- cubed
1 cup asparagus
1 cup zucchini
1 clove garlic chopped finely
1 small piece of ginger or crystallized ginger chopped fine
Heat up a wok ( or frying pan). Add 1 tsp of olive oil and add the garlic and ginger. Let simmer and brown for about 2-3 minutes and then add your veggies. Let cook uncovered stirring frequently for about 5 minutes ( this depends how crisp you like your vegetables.) I only cook for 5 minutes and then stir in the cubed tofu. Allow to cook for another 5 minutes and then sprinkle some curry on top and serve. When you add curry and stir it in, the tofu’s color is a nice golden yellow.
