I decided that I would like homemade salsa all year long.
I have grown many tomatoes ( too many for me!) and the farmer across the street has even more than me. So what to do? Make a big bowl of salsa and freeze it.
This salsa has no cooking time.
You want to have the tomatoes on the ” not so ripe side” so that they stay in the freezer without wilting.
Just mix up the ingredients very well and put in the freezer for later.
Here is the recipe:
6 large tomatoes
1 cup chopped white onion
2 teaspoons cumin
1/4 cup apple cider vinegar or lemon juice
fresh spices of your choice ( I used basil, sage, stevia and parsley finely chopped).
You can also use the prepared spices such as papar, cinnamon, and cayenne pepper if you like.
2 cups chopped sweet peppers ( use colorful ones, red, yellow, orange and green) to make you salsa look great!
For variety sake, I also add some fresh fruit to my mixture of veggies. Today I used 1 yellow apple and 1 green pear- chopped.
If you have a problem chopping- use a chopper. I have a hand chopper that is great for veggies, especially when chopping onions.
