I love salsa all year long, but in the summer there are a lot of fruits that you can add to your salsa to spice it up. Today, I used some apples and cantaloupe. It looks and tastes delicious.
Here is the recipe: Fruity Salsa
2 large tomatoes or 1 can tomatoes. Fresh works best!
1 cubed small onion
fresh spices of your choices. Cumin, parsley, basil, stevia, and sage ( I used fresh parsley, sage and basil which I chopped finely) You can also use prepared spices.
2 cubed green peppers
1 cubed orange pepper
1 clove garlic, chopped
2 apples 1/3 cup cantaloupe
Some cooks do not cook salsa at all, they just mix all the above ingredients and let sit in the refrigerator for a few hours before serving.
I like to simmer my garlic and onions first. Add the green peppers and 1 apple. I simmer for about 5 minutes, just to soften. I then let set for a few hours in the refrigerator.
I then add some raw ingredients to the softened mixture. Some cooks even take a cup of the simmered mixture, put in a blender and then re-add to the mix.
I like to add 1 raw apple, 2 more peppers and 1 cup of cantaloupe.
Then refrigerate for another 2 hours before serving on my favorite dishes.
