I love portobello mushrooms. Here is a simple recipe to make a portobello sandwich for lunch.
1 large portobello mushroom
spices: I sprinkle some low sodium soy sauce on both sides of the mushroom, place is frying pan or wok with a spray of cooking oil.
I add spices such as a garlic clove crushed, or garlic powder. I also add some steamed quinoa with mustard greens for a complete lunch.
You can add any veggies, and saute them with the mushroom for about 15 minutes, turning once. When cooked I add a slice of ” soy cheese.” You can top with any cheese and let the cheese melt.
Place in a whole wheat roll or some homemade bread as I have, and you have a great lunch!
Eating healthy does not have to be difficult. A portobello sandwich is very low in calories and fat. The only calories in this sandwich is the thin sliced bread that I used for about 200 cal. total or 3 pts weight watchers, with the soy cheese included for 1 pt., and 0 points for the mustard greens that I placed on top of my sandwich

Try to make your meals diverse, colorful ,interesting and of course tasting pleasant.
I also use colorful small plates fro serving my meals. Small plates can help you to think you are having more than you are!
Also – eat slowly, putting your fork down between bites of food. This helps you to get on the road toward mindful eating where you are tasting every mouthful, and chewing very slowly!
