Tempeh with Mustard Greens and Mushrooms

Here is a healthy recipe that is low in calories and very good. The tempeh is fermented soy and it takes on the taste of whatever spice you use in your recipe. My favorite is curry because it spices everything up- just a bit.


1 chopped white onion

2 ounces of tempeh ( 1/2 package) sliced thin

6 mushrooms- I used mini portobella, sliced

2 cups mustard greens, fresh or frozen

Cooking spray

Spray some cooking spray into a skillet and toast the onion first with the mushrooms and put to side

Next cook  the tempeh, cook on a fairly high temperature so that they are grilled on both sides, and then add the mustard greens. Any kind of greens are great for this recipe such as kale, spinach.

Add the rest of the ingredients along with a sprinkle of curry to taste. If you like it spicy, add more curry!
