It is time for a change. Trying new things can be fun.
Here is a recipe for a meatless meatloaf that uses grains, wild rice and soy crumbles for the meat.
Ingredients
2 tsp canola oil or olive oil
1/2 cup finely chopped celery
1 cup finely chopped onion
1/2 cup finely chopped red pepper
1/2 cup grated carrot
1 Garlic clove minced, or 1/2 teaspoon powder
Cooked cracked whole wheat 1 cup
Cooked wild rice 1 cup
2 teaspoons egg substitute powder
Balsamic vinegar 1/3 cup
Agave syrup 2 tablespoons
Soy Sauce 2 tablespoons
1 package of soy crumbles (partially thawed)
1/2 cup wheat bread crumbs
Heat oil in a large frying pan on medium heat. Add onion and cook for about 5 minutes, stirring often. Add red pepper, celery, carrots, garlic and cook for another 5 minutes.
Transfer to medium bowl. Add wheat and wild rice. Stir well and set aside.
Add soy crumbles to wheat and rice mix and stir well. Add bread crumbs last so that everything comes together. If to sticky add more bread crumbs to make it firm.
Press into a loaf pan and bake uncovered at 350 degrees for about 1 hour or until fully cooked.
