Veggie Bean Soup
I use whole grain wheat that I buy dry, bring to a boil and simmer for about 1 hour, then use 1/4-1/2 cup in my recipes.Today, I just steamed some fresh kale and carrots. while steaming, I added some ginger ( 1 cube) and garlic. The smell was amazing!I also used the broth created from the vegetables to use as my base for a vegetable and Black bean soup. I added carrots ( 1 cup), onions, ( 1/2 cup) some left over spaghetti ( 1 cup), 1 cup kale and 1 cup red cabbage and 1/2 cup whole grain wheat. Simmered them for about 15 minutes and then added 1 can black beans that I drained and rinsed. For some extra flavor, I added some ground cumin ( 1 tsp) and Ground Turmeric. This recipe only takes about 20 minutes to prepare. You decide on how long to simmer your vegetable soup based on how cooked .
