>Warm tortilla wrap and Baked Squash

>On this cold winter days, something warm for dinner is a must. I make a big batch of veggy soup for the week and then I try to plan a few meals.
Here is a vegetarian meal that I had for dinner tonight.

All you need: small round corn tortilla wrap
Soy Protein: “Gimme lean” ground sausage style soy
1 slice rice “cheese” vegan style
1 acorn squash

I usually cook my acorn squash in the microwave for about 10 minutes and let it cool. When cool, I  take the seeds out, cut into wedges, roll in bread crumbs.
Then spray a pan with cooking spray and bake the squash until golden at 350 degrees for about 20 minutes, flipping once.

For the tortilla wrap
Cut a 1/4 inch of ground soy ( gimme lean is the kind I used in this recipe). Place on a sprayed frying pan and flatten. Cook soy for about  5 minutes, flipping to brown both sides.
Next warm the tortilla and place a slice of cheese on it before you put the ground soy on the tortilla.
I used a vegan rice cheese slice.
Fold wrap carefully and flip over once to brown.
Soy protein has 7 grams of protein
0grams of fat
0 grams cholesterol
7 grams carbs for a total of 2 points for 4 oz. ( Weight Watchers pts)
The Vegan cheese: 1 pt
The Small wrap : 1 pt
