If you need a quick vegetarian dinner try this simple meal.
1 small or 1/2 large eggplant sliced 1/4 in, peel on.
1 Clove garlic- crushed and cut into small pieces
1 tablespoon extra virgin olive oil/ olive oil cooking spray
1/2 cup broccoli
1/2 cup yellow pepper ( sweet)
1/2 cup quinoa ( already cooked0
Italian prepared bread crumbs ( or make your own)
5 small baby bell mushrooms
In a small pan fry crushed garlic
Simmer for about a minute
Prepare the eggplant and mushrooms together. Dip slices of eggplant into almond milk and roll in
the bread crumbs. Do the same for the mushrooms.
Add eggplant and mushrooms to the garlic and cook for about 5 minute flipping eggplant/ mushrooms.
Then add the rest of the ingredients including the pre-cooked quinoa
Simmer for another 5 minutes
Good quick meal. It has plenty of protein ( quinoa has about 7 grams per 1/2 cup)
