>Easy Recipe: Cauliflower Soup

Here is a lean and fit recipe for a cold winter day.
1 pound Cauliflower Florets
4 medium potatoes peeled and cubed
1 large onion
1 tablespoon extra virgin olive oil
3 cups vegetable broth
2 cups almond or soy milk
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper
2 teaspoons fresh thyme or 1 teaspoon dried
Saute the onion in olive oil. In a separate large pot, place cauliflower and cover with water.
Bring to a boil, reduce heat and simmer until slightly tender
Drain off the water
Add potatoes, sauteed onion, vegetable broth, pepper and cayenne pepper and return to simmer. Cook for about 40 minutes until vegetables are cooked.
Remove from heat and then place 1-2 cups of hot soup into a blender and mix at low speed until smooth, and repeat with remainder of soup mixture.
