In the winter we may not want to go for a walk, but it probably is something we need to do.
You only need a few minutes of that sunshine to get your Vitamin D for the day!
I plan on cooking a light lunch and then going for a walk in the snow.
Here is a simple meal to try:
Quinoa is a great grain that I cook with all the time. I just put a little clove a garlic in it, add some spinach and a few carrots. It only takes about 12 minutes to cook.
Boil 2 cups of water to every cup of quinoa. When it comes to a boil, simmer for 10-12 minutes and then add whatever veggies you enjoy. I added some spinach and carrots, along with a few cubes of tofu. I also made a veggie burger out of “Gimme Lean ” soy meat. I added 1/2 corn on the cob which I purchased this week. I really miss the fresh corn in the winter.
Try this simple lunch experience and then take a walk!
