I have been told many times that an apple a day keeps the doctor away! And I do love them. But did you know that there is some truth to this old wife’s tale.
Another Old English saying: “To eat an apple before going to bed will make the doctor beg his bread”
So why should we be eating apples?
Remember- if you are going to eat an apple, you should eat it down to its core. ( so eat everything but the core/seeds)
Almost half of the vitamin C content of an apple is just below the skin.
Apples are also rich in fiber, both soluble and insoluble- (insoluble if you eat the peel!)
Over 2/3 of the fiber and almost all of the antioxidants are found in the peel.
Apples are a rich source of phytochemicals which play a role in fighting off cancer and heart disease.
Heart health: Just 2 apples a day may keep heart disease at bay
Cancer: In one study of mammary tumor growth- apples can protect cancerous cells from forming and in another study, the flavonoids found in apples inhibited the spread of cancer cells in colon cancer patients.
Weight loss: It appears that a study found that overweight women who added 3 apples a day to their low fat diet lost more weight than those who did not.
Brain Health: A study found that eating apples and apple products protect against cellular damage attributed to memory loss.
Diabetes: Diabetics who consumed apples had smaller spikes in glucose after eating, perhaps due to their soluble fiber content.

Here is a quick recipe for cranberries and apples.
All you do is rinse and cook a bag of fresh cranberries and 1 apple, peel cubed add one cup of water, bring to a boil and simmer about 5 minutes- until the cranberries begin to pop! Then add a 1/2 cup agave.
They taste great! Warm or cold!
