>Grain breads are easy to make and require no yeast.
I use both quinoa and amaranth in my recipes.
Here is an easy one:
Amaranth Raisin Bread
1 cup raisins
2 tsp baking powder
1/2 cup Amaranth ( or quinoa)
2 eggs or 1 tsp. egg substitute
1/2 cup honey or agave
1 tsp vanilla extract
2 cups whole wheat flour
1 cup water (boiling)
1/4 cup canola oil
The most important task is to soak the raisins and amaranth in the boiling water for 15 minutes. (You do not continue to boil the raisins and amaranth. You just bring the water to a boil and then let the ingredients stand in the water for about 15 minutes.)
Then you can add the rest of the ingredients.
Oil the baking loaf pan and bake at 350 degrees for about 1 hour.
Makes one loaf.

Another winter recipe: Multi grain Baked Apples
1/2 cup large flake rolled oats
2 tablespoons buttery spread (I use Best Life)
1/3 cup cooked wild rice
1/4 cup agave
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
4 large unpeeled apples
1 cup apple juice
Heat small frying pan on medium ( spray with cooking spray). Add oats and cook for 5 minutes stirring occasionally until lightly brown
Add the rest of the ingredients. (except apples)
Heat for 1 minute and set aside.
Remove cores from apples ( use melon baller, to about 1/2 inch from bottom and fill apples with oat mixture.)
In a deep casserole, place apples in apple juice. Bake uncovered at 375 degrees for 30-35 minutes.
Makes 4 stuffed apples.
Calories: 302 7.9 grams fat.
