>I love making lunches with all greens and a bit of starch.
I cube a cooked (leftovers) potato that has the peel attached
I put a dab of olive oil in a pan and begin frying a small chopped red onion.
After a few moments I add the potato.
Next I add some spinach (fresh or frozen, I used frozen today)
And then I added some bok choy ( Chinese greens)
Finally when everything is almost cooked I add a handful of peas (special crunchy green peas that have been toasted)
It all takes only a few minutes and you have a great lunch of greens!
