>Stay healthy this fall with some squash


Steam, bake or fry it up, the autumn veggies are at your local open market for the picking. I like to steam my squash along with some eggplant and add some tofu that I roll into sesame seeds along with some mustard greens.
A simple meal of steamed veggies! Very good for lunch!

You can also bake squash or pumpkin and stuff it with a combination of brown and wild rice, sliced almonds and mushrooms. it will make a great autumn dish! Autumn is also a good time to make soup from squash. It is easy to make, just cook ( steam or bake) the squash and mash or blend in blender. Then add some of your favorite spices such as cinnamon, cayenne, and ginger for a great warm dish on those cold autumn days!
