>Couscous and Veggies


Here is a simple lunch or dinner side  for you to enjoy.
1/2 cup Israeli Couscous Toasted Pasta, wheat
2 large carrots, pealed and cut into chunks
1 bell pepper cut into chunks
1/2 red onion cut into rings
1 ripe tomato cut into chunks
1/2 cup corn, drained
1 medium potato cooked  with skin ( cook before adding to recipe)
1 cup your choice of beans, drained and rinsed ( I like all kinds of beans!)

In a large frying pan add one tablespoon olive oil and the couscous, cook on medium heat for about 3 minutes
Add the raw carrots and ripe tomato and cook for about 5 minutes
Then add the other ingredients and simmer on low for about 15  minutes depending on how crunchy you like veggies
You can also add 1/2 cup of prepared salsa at the end for flavor
