>Quinoa: “keen-wah” Spicy Chili

>For everyone who would like to make great chili without the meat, Quinoa is a good meat replacement, you just cook it like rice- 1 cup quinoa and 2 cups water.

1 cup cooked quinoa
1 cup water
1 can tomato paste
1 cup crushed tomato/ or fresh tomatoes
3 cans of beans (variety is best!)
1 cup corn
1 clove garlic
Cayanne pepper, chili powder, cumin to taste ( more if you like spicy!)
1 small onion
Chop onion and garlic and place in skillet with 1 tsp olive oil or olive oil cooking spray.
Brown, and then add tomato paste, crushed tomatoes, 1cup water and spices.
You may need more water depending on the thickness you would like.
Add quinoa
Cook for about 20 minutes and enjoy
I like my chili with wraps. I place the chili in tortilla wraps, brown ( to make them crunchy) and enjoy!
