>Minestrone Soup

2 large tomatoes crushed
2 cloves garlic chopped finely
1/2 red onion chopped
1 can garbonzo beans (do not rinse)
1 green or red pepper cut chopped
1 cup eggplant or Zucchini chopped
4 fresh basil leaves
1/2 cup fennel chopped

Simmer onions and garlic until brown, add basil and then tomatoes
After about 10 minutes add all ingredients and simmer until almost all
liquid is gone. ( about 30 minutes) Makes about 4 servings
