>Stuffed Tofu Shells

>Boil manicotti for about 5 minutes- al dente. Rinse and put aside.
Chop up tofu and marinate in your favorite spices for about 1/2 hour (with water still in the tofu) Use very firm tofu.
I use a variety of spices including curry, tumeric, basil and orangino. Chop a red pepper and small onion, cook in olive oil until tender.
Drain tofu and then mix with the peper and onion. Stuff the shells.( you can also add vegan meat such as ” sausage” meat to the mixture)

The sauce: You can use commercial sauce or make your own.
Making the sauce: 1 can tomatoes (12 ounce) 1 can tomato paste, l clove garlic, spices as you like!
First chop and cook a clove of garlic in olive oil ( 2 tablespoons). Next add the can of tomatoes, a cup of water and then the paste.  Cook for 1 hour.
Baking tips:
As you place the shells into a roaster, put a layer of sauce at the bottom and sauce on the top of each shell.
Bake at 350 degrees for 1/2 hour. Cover  with foil for the first 15 minutes and then uncover.
