>John’s Cabbage Salad

>1/2 Head of shreaded cabbage
1 small red shreaded onion
1 cup shreaded carrots
2 tablespoons olive oil
1 large sweet potato, purple or white potato ( precook the potato and cube)
1 tsp Tumeric

Begin by cooking- carrots and onion in a large frying pan with the 2 tablespoons of olive oil
After 5 min add the cabbage and potato and simmer for 15 minutes. Serve hot or cold.
The colors are great!!
