>Healthy Veggie Cold Spring Salad

>Cook as per directions 1/2 lb of whole wheat spiral macaroni.
While waiting, cut up 1/2 cup carrots, 1/2 cup celery, 1/2 cup red onion, 1/2 cup black olives, 1 clove garlic ( or 1/2 tsp garlic powder.) and 1/2 jar artichokes in water.

When spirals are cooked, rinse in cold water.
Add mixture above to the sprials.

Dressing: 2 tbsp spicy brown mustard, 2 tsp olive oil, 2 tbsp balsamic vinegar, 1/2 tsp paparika, and  cayanne pepper to taste.
Pour mixture over salad, and refrigerate for at least 1 hour. (better tasting the next day!)
