I started off the day thinking that it is time to make some soup!

The cold weather is a good time to have some homemade soup for those snow shoveling days. You can keep it in the refrigerator for about a week, so you may want to make a few quarts to freeze for those days when you need some warmth.

I began my soup adventure by chopping some celery. I used a cup of celery, cup of chopped cabbage and 1 large white onion chopped.

I love to experiment with veggies, especially in the fall when there are so many varieties.

Today I steamed a butternut squash for about 10 minutes, cut it in half, scraped out the seeds  and let it cool. You decide on the texture. I like my squash a bit firm so I steam for 10, you may want more steaming time.

 

 

 

The stuffing

1/2 cup of whole wheat breadcrumbs

2 teaspoons raisins

2 teaspoons slivered almonds

1 clove chopped fresh garlic

1 small chunk of fresh ginger, chopped

Salsa Recipes: Green and Traditional Red

I decided that salsa needs some experimentation, especially related to the spices so I bought both regular large ripe red tomatoes today at the farmer’s market and tomatillos for a green salsa.

2 Large red tomatoes chopped

1 small onion chopped

1 clove chopped garlic

Chopped fresh spices such as cilantro ( hand full) is what the recipe calls for but I used handfuls of chopped basil, a sprinkle of fresh thyme and sage.

Sweet Potato Wrap and Crunchy Apples

For some low calorie foods I always think of apples and sweet potatoes!

You can make a special lunch with these two simple foods that are so very nutritious.

First steam a sweet potato, slightly on the firm side. Allow to cool and remove the peel.

Next mash with a potato masher and add: 1/2 cup whole wheat bread crumbs, 1/3 cup of slivered almonds, 1/3 cup of sunflower seeds ( unsalted) and mix together. Keep adding more bread crumbs to the mixture if it is too moist.
