Today I went to the Farmer’s Market and bought purple string beans and collard greens.

When you think of healthy eating, I believe that you may have to make some changes with some healthy purchases.

Going to the Market

There is nothing better than eating the same day you purchased an item. The taste is so much fresher. That is why I shop at the Farmer’s Market.

The Farmer’s Market is a good start because our local farmers use less pesticides, and most do not overgrow or try to enhance production with different kinds of products.

Staying with the locals and the organic farmers seems to be a good start for planning healthy meals.

Today I steamed collard greens for about 15 minutes along with a fresh clove of chopped  garlic.

After cooled, I added a cup of prepared salsa ( of course it would be better to make your own salsa which is easy: chop 2 large  tomatoes, add some cumin and chopped basil, a large green or red pepper and small onion copped. Refrigerate over night.)

Another power packed vitamin filled veggie is the beet.

I love to cook them, skins on, chopping off the tops.

All you need is to add is some vinegar after cooking the beet, peeling it and allowing it to cool. Then you can slice it and add the vinegar.

Beets are great for the iron you may need in your diet.

A Lentil Veggie Burger will Give you about 9 grams of protein

I  made  a homemade veggie burger. Just cooked lentils ( 1 cup)  and a small potato make a great veggie burger. You just mix a cooked mashed potato with  1 cup 0f cooled and  cooked lentils ( following package directions).  Shape them into burgers and cook in a skillet. They take about 5-10 minutes depending on how you like them. Just spray some canola oil /olive oil in the skillet and cook on both sides.

You can add other ingredients such as a chopped clove of garlic, chopped carrots,  small chopped white or red onion.

I turned it into a great warm sandwich with a slice of vegan cheese and toasted it on whole grain bread. I also had a small salad with olive oil and vinegar dressing and some chick peas.
