Pumpkin Lovers Bread

 

 

 

Here is a simple recipe for pumpkin bread

5 cups whole wheat flour ( you can use half and half- white to wheat if you like). If the addition of pumpkin make the mixture too sticky, you may need to add another cup of flour.

2 tsp baking soda

2 tsp baking powder

1 tsp powered egg re-placer

1 tsp cinnamon

1 tsp ground cloves

1 tsp allspice

1/2 cup molasses

1/4 cup almond milk

1 can pumpkin puree

1 cup canola oil

1/2 cup cranberries

1/2 cup quinoa- soaked in boiling water for 15 minutes and drained

Grease and flour 2 bread pans.

In a large bowl mix flour, baking powder and soda, spices and then add oil, almond milk, pumpkin and molasses. Mix well and then add cranberries. Divide batter between 2 pans.

Bake for about 1 hour-until toothpick  in center of pan comes out dry.
