Putting More Veggies in your Life

It is easy to put more vegetables into your diet.

What you need to do is experiment with different kinds of vegetables.

Squash

I love squash this time of year, and there are such a variety. Orange, yellow and green.

And all you have to do is grill it. I slice zucchini lengthwise and rub spices and olive oil on it – choose your favorite spices. And then just grill it, flipping a few time. It does not take long.

Eggplant

I also experiment with eggplant. I like it dipped in soy milk and then coated with wheat breadcrumbs. Saute it in a little bit of olive oil and add a side of  wheat pasta. Yes, you have a great dinner.

Corn on the Cob

Did you know you can just put corn on the cob directly on the grill without husking it? I just soak them before putting on the grill. It is a great moist corn when you grill them in their natural state.

Experiment with spices too. Grow them, chop them up and put them in your favorite veggies, including salads and salsas.

Pizza

Easy to make on the grill. If you like crispy pizza use a pizza stone. They are inexpensive and work well. I grill different kinds of pizza on the grill and it is great.

Basil is my favorite, spicing up any meal. You can grow it outdoors or inside for special winter meals too!
