Stuffed Portobello Mushroom

Here is a great recipe for the grill or on top of the stove. For those warm summer days, a portobello mushroom is a great alternative to eating a hamburger, and it is a lot less calories! Because of it being round, you can also put it on a bun!

 

Portobello mushrooms are great. Today I had a great lunch which consisted of a large stuffed portobello mushroom, a small wrap toasted and some veggies; broccoli, peppers and carrots. What a colorful meal.

Here is how to make the mushroom.

This is a vegetarian meal so I used “Gimme lean soy meat” for the stuffing. ( you can also make it with real ground meat, but you should cook it thoroughly before  stuffing the mushroom with it)

Use about 1 oz soy meat. Flatten it into the shape of a hamburger patty and them press some seasoned bread crumbs into it before you put it into the mushroom. I use whole wheat bread crumbs.

Place the mushroom into a frying pan with a spray of olive oil. Allow it to cooked, covered for a few minutes and then flip. After flipping, put about 2 teaspoons of lite soy sauce on top of the mushroom and steam for a few more minutes. Add the flattened meat to the mushroom. Cook for 5 minutes and flip so that the meat browns. The entire process should take about 15 minutes. Top with your favorite salsa.

Steam some veggies to go along with your mushroom. I also toasted a small wrap that I stuffed with a slice of veggie cheese. I dipped this in some hummus on the side.
