>Quick soup and Dessert

>Here is a quick lunch idea.
Quick tomato soup
Ingredients
1 4 oz can of V-8 Low Sodium
1/2 cup almond milk
1 small tomato, cubed
1 small red potato ( already cooked with skin on) Cubed
1 /2  small sweet potato ( already cooked with skin on) Cubed
1 teaspoon garlic powder or clove of garlic crushed
1 teaspoon oregano

In a sauce pan mix almond milk and V-8, add potatoes, spices and  1 small chopped tomato.
Cook for about 5 minutes and serve.
Each  1 cup serving has about 94 calories or 2 points weight watchers.

Pumpkin Pudding

1 small can pumpkin ( or small fresh pumpkin, cooked and cubed)
3 oz firm tofu
1 teaspoon cinnamon
1 teaspoon nutmeg
1/4 cup agave
1/4 teaspoon vanilla
Mix in a blender or food processor the can of pumpkin with the tofu until smooth, adding the remainder of ingredients.
Pour into bowl or individual cups and place in the refrigerator for 1 hour before serving. Sprinkle with
cinnamon.
Each serving of 1/2 cup has about 100 calories or 2 points Weight Watchers

This quick tomato soup is great. Simple to make, and you can have it plain or with some veggies for an low calorie meal.
