>Cooking With Quinoa (keen-wah)

>Grains are so important to your digestive health, and also a good source of protein in your diet.
Here is a recipe with quinoa. It is a nutty grain that does not take very long to cook.
Quinoa with Mushrooms:
Ingredients:
1 cup quinoa ( already cooked) follow package directions, usually around 20-30 min)
1 cup chopped onion
1 clove garlic, minced
1 cup red bell pepper cubed
1 teaspoon basil
1 cup button mushrooms sliced thin
1 teaspoon olive oil
Place tsp. olive oil in frying pan ( or use cooking spray)
simmer the garlic, bell pepper and onion, cook for about 1-2 minutes
Stir in the mushrooms and simmer for about 2 minutes.
Add 1/3 cup water and simmer until liquid is absorbed.
( If you like crunchier vegetables do not simmer as long- or add the water)

When quinoa is cooked stir in the mushroom mixture.
A very good side dish for any meal!
