>Sweet Potato (or Yam) Soup

>I have heard that people who eat soup are thinner!! That is my tip for today on why you should eat soup!
Since it is the time of year when we will be needing some extra warmth, let’s cook some soup!
2 medium sweet potatoes or yams
2 cups soymilk
1 tsp lemon juice
2 1/2 cups water
1/4 tsp cayenne pepper
1/4 tsp cinnamon
1/4 tsp salt
1/2 tsp turmeric, ginger and cumin
1 small onion chopped
Peel yams and cut into chunks. Steam over boiling water until tender ( about 40 minutes)
After cooled, mash
Braise the onion into 1/2 cup water until soft and then add the spices
Cook over low heat for about 2 minutes stirring constantly
Add the remainder of 2 cups water to onions and add lemon juice
Add the mashed yams and simmer for about 10 minutes
Add soymilk and puree in blender until smooth
Return to pan and heat over medium heat for about 10 minutes
 82 calories per serving
2 grams protein
18 grams carbohydrates
0.5 grams fat
227 mg sodium
0 mg cholesterol
