>First of all, Quinoa is a complete protein so it is very good for people who are trying to eat less meat or are vegetarian already.
Some varieties of Quinoa contain more than 20% protein! Quinoa contains more protein than any other grain. Because it is a complete protein, it has all the essential amino acids, especially the amino acids lysine, methionine and cystine.  Body builders like it.
Quinoa is rich in iron, potassium and riboflavin as well as B6, niacin and thiamin. It is also a good source of magnesium, zinc, copper and manganese along with some folic acid.
Quinoa contains at least 16 different triterpine saponins which have anticancer and anti-inflammatory properties that inhibit cholesterol absorption!
Another plus: compared to rice and wheat, Quinoa was found to offer greater satiety, thus making it a great food for fighting obesity.
