>Eat your Veggies

Here is a dish for lunch. It is easy to make, and you can use some leftovers. Start off with some crushed garlic in a frying pan with a teaspoon of olive oil, put in the veggies that take the longest to cook, such as carrots, broccoli.

Simmer for 5 minutes and then add other veggies. I used colorful peppers,  broccoli, mushrooms, some already precooked butternut squash and a 1/2 cup of leftover spaghetti. After adding all ingredients, allow to simmer for another 5-10 minutes, or until it is the consistency that you like. Sprinkle with Cinnamon and enjoy!
