>Veggie Penne Cold Salad

>A good summer or fall dish that is low in calorie, but remember portion control!! You only need about 1 cup of this dish!

You will need 1/2 lb wheat penne (follow directions for cooking)
2 tablespoons  fresh basal ( chopped finely)
1 small onion
3 cloves garlic
1 cup cubbed egg plant
1 cup cubed squash
1 cup carrots, cubed
1 can large black olives
1/4 teaspoon cumin
1/2 teaspoon tumeric

Saute 1 small chopped finely onion with 2 cloves of garlic
Add 1 cup chopped egg plant and 1 cup squash (any type)
Saute for about 5 minutes
In another pan saute 2 cup spinach with olive oil for about a minute. You can use frozen
or fresh spinach
Add drained black olives
Add carrots last for crunchiness
Add spices
Mix all ingredients together
For a creamier dish, add prepared lentil dip

Cook, rinse and cool wheat penne
Add above ingredients
Cool in refrigerator for about 2 hours
Enjoy!
