>Pasta Fagioli- vegan style

>1 garlic clove
chopped finely
1/2 cup finely chopped onion

1 can stewed tomatoes or fresh tomatoes cut into
small pieces

Vegetable broth ( 1 carton)
Chopped parsley, oregino and basal- 1 teaspoon each
2 cans beans- white northern beans (rinsed)
1/2 pound pasta (small ditalina)

Saute onion and garlic in olive oil until tender. Add tomatoes, broth, spices, bring
to boil and then beans
Cook pasta separately,  and then add to the soup with the pasta water
Total cooking/preparing time is about 45 minutes
Serve with Italian bread
