>Cauliflower and Potato Pancakes

>6 mini or 2 large potatoes
1 small onion chopped
1 cup green pepper
1 cup bread crumbs
1/2 cauliflower head
 1 tablespoon soy spread (or olive oil)
1 clove garlic/or  a shake of garlic powder

Steam or boil potatoes and cauliflower until soft
Let cool and then mash together with above ingredients
Make sure you save half of the breadcrumbs for the outside of pancakes
Roll pancakes into balls and press flat
Use the remaining breadcrumbs to roll each pancake. Press lightly so they do not fall apart
Use a cookie sheet and spray with cooking spray to prevent sticking
Cook for 15 minutes at 350 degrees, and then flip over and enjoy the crunchy delight!
